1.Golden brown crunchy breaded Mushrooms:
- Sunflower oil for deep fry (Sunright refined sunflower oil would be the best choice)
- 500 grams of button mushrooms
- 4 tablespoons of plain flour
- 2 eggs
- 90 grams of fresh bread crumbs
- Bunch of flat leaf parsley
- Small bunch of spring onions
- 100 grams of homemade mayonnaise with sunflower oil
- 100 grams of natural yogurt
- Few drops of freshly squeezed lemon juice
- Use a blender to chop the fresh bread into bread crumbs and leave it in a bowl.
- Mix yogurt and mayonnaise and blend it till becomes smooth like a white sauce.
- Finely chop coriander leave and Spring onions and mix both.
- Now add the coriander and spring onion mixture into the Yogurt and mayonnaise paste and mix everything. Add a few drops of lemon at the end and refrigerate the white sauce.
- Meanwhile, beat two eggs in a glass bowl, do it until it becomes fluffy.
- Take four tablespoons of flour in another bowl and add a few pinches of salt and a teaspoon of chili powder.
- Wash the mushrooms until it gets rid of mud and squeeze the water out of it and allow it to dry.
- Need not cut the mushrooms, Put each mushroom in a long skewer.
- Dip each mushroom into the beaten egg and then dip it to the flour and then finally dip into the bread crumbs. This process will hold the mixture to the mushrooms.
- Repeat this process until you coat each and every mushroom.
- Now heat a pan and heat sunflower oil and deep fry the mushrooms until it turns golden brown.
- Now serve it hot with the white sauce we prepared.
